What was I waiting for?

Specialty foods tend to be expensive, so whenever possible I try to get by with a home made substitution. After the failure of a recipe that I desperately wanted with all my home made egg replacers I decided to bite the bullet and price out store bought egg replacer. I can buy a box of Ener-G Egg replacer powder for $5.69. Each box has enough powder to replace 100 eggs. That works out to be about $0.60 per dozen eggs, making the replacer cheaper than real eggs. My rice patty recipe works with it and I'm excited to see if it makes other recipes (bread!) easier.
