Ingredients:
3 cups cooked rice
1 cup carrot, grated
1 medium onion, diced
2 cloves garlic, minced
1 tsp. salt
½ tsp. pepper
2 eggs, beaten (I use Ener-g egg replacer)
½ cup flour
vegetable oil for frying
Directions:
Combine ingredients in a bowl and mix well. Form into patties and fry on both sides in oiled skillet until browned.
Review:
For months I've been trying to figure out how to make rice easier for Caden to eat. My prayers were answered by this recipe I got at the Macey's Little Theater cooking class a few weeks ago. Everyone in class seemed to like them with the original recipe and they work decently with the egg replacer. Caden loves eating them, and I love that it sneaks a veggie into him. I've also made them with yellow summer squash and zucchini with good results.

I should try these out. Kind of reminds me of this cheddar egg loaf recipe my mom has. It's a mix of rice, eggs, spaghetti sauce, cheese, etc that you bake in a loaf pan...sorta like meatloaf. I think it's pretty good so maybe tomato sauce would be a good mix-in to the patties.
